新茶与陈茶是相比较而言的，在习惯上，将当年春季从茶树上采摘的头几批鲜叶，经加工而成的茶叶，称为新茶。茶叶收购部门的“抢新”，茶叶销售部门的“新茶上市”，茶叶消费者的“尝新”，

指的都是每年最早采制加工而成的几批茶叶。但也有将当年采制加工而成的几批茶叶，称为新茶；而将上年甚至更长时间采制加工而成的茶叶，即使保管严妥，茶性良好，也统称为陈茶。
